# What ran out, off the menu at once

> Mark a dish or an option sold out at one location: it's off that menu at once and comes back on its own at the next service, or when you switch it back on.

The kitchen or the counter marks a dish or an option sold out, and that location's menu stops offering it right away. It comes back on its own at the next service, or when someone switches it back on.

**Short answer:** In Restoman each location keeps its own sold-out list: a dish or an option, until the next service or until someone offers it again. That location's menu shows it as sold out and won't take orders for it; other locations sharing the menu keep selling it.

## 01. Why mark sold-out items in the system

When a dish runs out and nobody takes it off the menu, guests order it anyway: the server walks back to the table, the order gets redone and, if it was already paid, the money goes back. Marking it sold out stops that before it happens.

- **Nobody orders what you don't have.** The dish or option shows as sold out on the phone menu and can't be added to an order.
- **Per location, not the whole chain.** If two locations share a menu, what runs out in Palermo keeps selling in Belgrano.
- **One option, across every dish.** Out of fries: mark them once and they disappear from every dish that offers them as a side.
- **No impossible orders.** If a dish has no required options left to choose from, the menu won't take it either, even though the dish itself isn't sold out.

## 02. How it works during service

Marking something sold out is one tap on the dish's row and another to choose until when. Whoever works at the location does it: the kitchen, the counter, the servers or the manager, from the dashboard or the kitchen screen.

- **Until tomorrow.** The usual when the day's batch is gone: it comes back on its own at the location's next service, by its opening hours.
- **Until I switch it back on.** For when a supplier falls through or the dish is off the menu for a while: it stays sold out until someone offers it again.
- **Sold out now.** One list with everything sold out at the location, until when and who marked it, with "Offer again" on each row.
- **From the kitchen.** The kitchen screen has "Mark a dish sold out" at the top: a search and a switch per dish, without leaving the tickets.

## 03. Where you notice it day to day

Sold-out items are the first thing to change on a busy night. Keeping them in the same system as the menu and the orders is what saves the back and forth between the kitchen and the floor.

- **On the guest's menu.** The dish shows dimmed with "Sold out · back tomorrow" instead of vanishing: guests know it exists and when it's back.
- **In the cart.** If something sells out while someone builds an order, the cart flags it and leaves it out of the total.
- **In the activity log.** Each sold-out mark is recorded with who made it and when, in the business's activity.

## And also

- **Instant.** The location's menu changes the moment it's marked.
- **Per location.** Each location keeps its own list, even on a shared menu.
- **Comes back on its own.** Until the next service, without anyone remembering to switch it on.
- **Your team marks it.** Kitchen, counter, servers or manager: whoever works there.

## Frequently asked questions

### What happens to a sold-out dish on the guest's menu?

It's still shown, dimmed and with until when it's sold out, but it can't be added to an order. If it was already in a cart, the cart flags it and doesn't charge for it.

### Can I mark just one option sold out, like a side?

Yes. An option is marked once and stops being offered on every dish that has it. If a dish is left with no required options to choose from, it can't be ordered either.

### When does a dish marked "until tomorrow" come back?

When the location's next service starts, by its opening hours. If the location has no hours set, it comes back at 6 a.m.

### Who can mark something sold out?

Whoever works at that location: the owner, admins, the manager, the counter, the kitchen and the servers. A custom role can be given that permission too.

### If two locations share a menu, does it sell out at both?

No. Sold-out items belong to each location: what runs out at one keeps being offered at the other.
